Sauvignon Blanc grapes were whole cluster pressed to eliminate bitterness and maximize fresh fruit characters. The juice was then settled before fermentation to produce a softer, more elegant mouthfeel. A portion of the wine was sur lies aged in American oak to add layers of complexity after fermentation.
